Ginger Cake

Ingredients

  • 6oz plain flour
  • 1tsp bicarbonate of soda (baking soda)
  • 2 tsp ground ginger
  • 2oz sugar
  • 2oz vegan margarine
  • 3oz light brown sugar
  • 3oz golden syrup
  • 6 tbsp non-dairy milk
  • crystalised ginger

Method
Heat the oven gas mark 4/180C/350F
Melt the margarine and golden syrup in a saucepan over a low heat
Remove from heat
Stir in all the other dry ingredients except the crystalised ginger
Add the milk and stir until well combined
Add the crystalised ginger
Line a shallow loaf tin with greaseproof pager and pour in the mixture
Bake for 30-40 mins until done
Remove from oven and leave in tins to cool for 10mins

Eat straightaway fighting anyone who tries to stop you 🙂
