Ingredients
- 1 onion diced
- 2 – 3 cloves garlic crushed or grated
- 1 tbsp olive oil or rapeseed oil
- 1 cup red lentils
- water or vegetable stock
- 2 potatoes – peeled and diced
- 2 carrots – grated
- half a cauliflower divided into florets (optional)
- sweet potato peeled and chopped (optional)
- yeast extract (optional)
- tamari
- salt, pepper and spices to taste
Method
- In a large saucepan fry the onions in the oil for a few minutes, add the garlic and fry a little longer
- Add the lentils and plenty of water or stock, bring to the boil and simmer for 5 minutes or so
- Add the potatoes and carrots and simmer for a few minutes
- Add any other vegetables.
- Remember to stir occasionally
- While cooking stir in the yeast extract, tamari and other flavourings to taste
- When the potatoes are cooked taste and adjust flavourings
- This is lovely spiced up with some chilli. If you want a soup just blend when cooked.
Serve with bread and a smile. Portions can be frozen if required
