Lentil Stew


  • 1 onion diced
  • 2 – 3 cloves garlic crushed or grated
  • 1 tbsp olive oil or rapeseed oil
  • 1 cup red lentils
  • water or vegetable stock
  • 2 potatoes – peeled and diced
  • 2 carrots – grated
  • half a cauliflower divided into florets (optional)
  • sweet potato peeled and chopped (optional)
  • yeast extract (optional)
  • tamari
  • salt, pepper and spices to taste


  • In a large saucepan fry the onions in the oil for a few minutes, add the garlic and fry a little longer
  • Add the lentils and plenty of water or stock, bring to the boil and simmer for 5 minutes or so
  • Add the potatoes and carrots and simmer for a few minutes
  • Add any other vegetables.
  • Remember to stir occasionally
  • While cooking stir in the yeast extract, tamari and other flavourings to taste
  • When the potatoes are cooked taste and adjust flavourings


  • This is lovely spiced up with some chilli. If you want a soup just blend when cooked.
    Serve with bread and a smile. Portions can be frozen if required
